Grated zucchini melts into the stock to create a naturally creamy soup without heavy cream.Ingredients• 2 tablespoons olive oil • 1 medium onion, diced • 1 medium zucchini, chopped • 4 cups NO chicken broth or vegetable broth • 1 teaspoon salt, plus more to taste • 6 cups potatoes, diced • 1 cup carrots, diced • 2 celery stalks, diced • 1 cup frozen peas Instructions1. Cook onions and zucchini until softened, about 8-10 minutes. 2. Add enough broth to Blend zucchini and onions until completely smooth. (Use emersion blender or add to regular blender.) 3. Pour in the broth remaining broth. 4. Add the potatoes, carrots, and celery. Simmer for 15-10 minutes until vegetables are tender.5. Mix in the peas and cook 2 more minutes. 6. Taste and adjust the seasoning. Chicken & Zucchini Rice BakeThis cozy one-pan dinner is loaded with tender chicken, fluffy rice, and hidden zucchini in every bite. The shredded zucchini melts into the creamy Parmesan sauce, making this an easy way to add extra vegetables without anyone noticing.Ingredients• 1 ½ cups Minute Brown Rice (uncooked) • 2 cups No chicken broth • ½ cup nondairy milk • 2 tablespoons olive oil • 1 teaspoon garlic powder • 1 teaspoon onion powder • 1 teaspoon Italian seasoning • ½ - 1 teaspoon salt • 1 pkg. Morning Star Farms Chicken Strips or 2 cups chicken substitute)• 2 medium zucchini, shredded and squeezed dry Instructions1. Preheat the oven to 375°F. Lightly spray a 8x8-inch baking dish with cooking oil.2. Squeeze the shredded zucchini with clean kitchen towels or paper towels until most of the excess moisture is removed. 3. Whisk together the NO chicken broth, milk, olive oil, garlic powder, onion powder, Italian seasoning and salt in the prepared baking dish. 4. Stir in the uncooked rice, “chicken”, shredded zucchini.5. Cover the baking dish tightly with aluminum foil. 6. Bake for 55 to 60 minutes, or until the rice is tender and most of the liquid has been absorbed. 7. Rest for 10 minutes before serving. Garnish with fresh parsley, if desired.
