INGREDIENTS FIRST! ½ cup peeled split mung beans½ cup Chaz Magaz (melon seeds)1½ cups water2 tbsp chickpea flour1 tsp garlic powder1 tsp onion powder½ tsp turmeric1 tsp mushroom powder1 tbsp tapioca starchSalt to tasteBlack salt (kala namak), added at the endTHE SECRET TO A BETTER VEGAN OMELET?! MELON SEEDS!I'm taking Miyoko Schinner's original vegan egg recipe to the next level and turning it into a vegan omelet! The secret ingredient is Chaz Magaz, aka melon seeds, combined with mung beans to create a creamy, savory egg batter. And here's the hack that makes this omelet possible: RICE PAPER! Inspired by Vietnamese grilled rice paper street food, this trick helps hold the vegan egg together so you can flip it, fill it, and fold it into an omelet.I'm loading mine up with vegan cheddar, Trader Joe's soy chorizo, and spinach, then topping it with avocado, homemade vegan sour cream, Tapatío, and fresh salsa.Did I nail it on the first try? Not exactly! I forgot the chickpea flour, which would have made the batter more robust. But with patience, low heat, and the rice paper hack, this vegan omelet came together beautifully!HOW TO MAKE ITSoak the mung beans overnight, or boil them for about 8 minutes until softened.Blend the mung beans, melon seeds, and water until smooth.Add the chickpea flour, garlic powder, onion powder, turmeric, mushroom powder, tapioca starch, and salt. Blend again until smooth.Place a sheet of rice paper in a lightly oiled pan over LOW HEAT.Pour the batter over the rice paper, spreading it evenly to cover the surface.Cook slowly until the batter sets and releases from the pan. Carefully flip and cook the other side.Add vegan cheese, soy chorizo, and spinach. Fold the omelet and cook until heated through.Finish with avocado, vegan sour cream (unsweetened vegan yogurt mixed with lemon and salt), Tapatío, and fresh salsa.Add kala namak at the end for that signature eggy flavor!CREDIT & INSPIRATIONThis recipe is my adaptation of Miyoko Schinner's original vegan egg recipe.
