Castilian Garlic Soup / Sopa de Ajo
Adapted from a recipe by: José Andrés and Richard Wolffe
Serves 4
3 tbsp. (45 mL) Spanish extra-virgin olive oil
6 garlic cloves, peeled and sliced
2 tbsp. (14.8 mL) white wine
1/2 tbsp. (1.15) pimentón (Spanish sweet paprika)
3 oz. (85 g) rustic white bread, crust removed, torn into small pieces
1 quart (0.94 L) chicken stock, preferably homemade
2 large eggs, beaten
1 tbsp. (3.8 g) chopped flat-leaf parsley
salt to taste
